Essential Food Safety Tips for Bakers & Cake Artists

February is here, and while some of you are battling the winter chill and others are enjoying summer warmth, one thing remains the same no matter where you are—food safety is essential in every kitchen!

Last year, we talked about the new food safety requirements in Australia and why having the right qualifications matters. This year, let’s go a little deeper into real-world food safety risks and how we can protect our customers and families.

Why Does Food Safety Matter?

Food handling might seem simple, but a small mistake can have big consequences. Contaminated food can lead to foodborne illnesses, some of which can be severe—or even deadly.

I’ll never forget the time I got food poisoning from a chicken schnitzel roll. Within hours, I was sick for over a week! And I was young and healthy at the time—imagine the risk for children, the elderly, or those with weaker immune systems.

Key Food Safety Tips for Bakers & Cake Artists

Here are a few things to keep in mind when working with baked goods:

🍰 Temperature Matters – If you work with dairy-based fillings, fresh cream, or custards, always store them at 5°C (41°F) or below to prevent bacteria growth.

🎂 Cross-Contamination Awareness – Always use separate tools and workspaces for raw ingredients and finished products. One mistake (like reusing a spatula that touched raw eggs) can lead to contamination.

🧼 Handwashing is Non-Negotiable – It sounds basic, but thorough and frequent handwashing is one of the simplest ways to prevent foodborne illness.

🥄 Sanitizing Tools & Equipment – From piping bags to rolling pins, keeping your tools properly cleaned between uses is crucial, especially when working with allergens.

Do You Need a Food Handler’s Certificate?

Many countries, including Australia, require food handlers to be trained in safe food handling, allergen management, cleaning, and hygiene. Even if it’s not legally required where you live, having a certificate adds credibility to your business and reassures your customers.
